Two-Stage Diamond Sharpening System
The rolling sharpener uses two different diamond surfaces to take your knife through the sharpening process.
The 400 grit surface uses industrial diamond abrasive with an approximate particle size of 46μm, providing an efficient cutting surface capable of working with knife steels across a variety of hardness levels.
Once the edge has been established, move to the 1000 grit diamond disc.
This finer surface is designed to hone and refine the results achieved with the 400 grit disc. A small number of controlled passes can help produce a smoother, more refined cutting edge.
The process is straightforward:
STEP 1 – 400 GRIT: Restore and sharpen the edge.
STEP 2 – 1000 GRIT: Hone and refine the finish.
No water is required during sharpening, making the system particularly convenient when you’re camping or travelling remotely.
Choose Between 15° & 20° Sharpening Angles
Different knives are manufactured with different edge geometries, so maintaining the correct sharpening angle is important.
The Dunn & Watson system provides 15° and 20° sharpening positions, allowing you to choose the option that most closely matches your knife’s existing factory bevel.
A knife originally manufactured with a 15° edge should generally be sharpened using the 15° guide, while a knife with a 20° edge should use the 20° guide.
A difference of a few degrees may be workable, but attempting to sharpen a knife at a significantly different angle effectively means reshaping the existing edge. For example, putting a knife with an existing 20° bevel onto the 15° setting can require considerably more work before the abrasive reaches the cutting edge.
For the best results, identify your knife manufacturer’s recommended sharpening angle and select the closest corresponding setting.
